1.5 cups cooked garbanzo beans (1 can), drained
1/2 cup thinly sliced red onion
1/2 cup chopped tomato
1/2 cup chopped green bell pepper
3 Tbs rice vinegar or ceider vinegar
2 Tbs lemon juice
2 tsp olive oil
2 Tbs minced garlic
2 Tbs chopped fresh parsley
Salt and Pepper to taste
Combine all ingredients. Let marinate at room temperature or several hours, then refrigerate.
