Allison's Go-To Slow Cooker Chili

2 Tbsp oil 

2 yellow onions, chopped

2 red peppers, chopped

4-6 garlic cloves, minced

1 Tbsp cumin

1/4 cup chili powder

2 lbs lean ground beef

1.5 tsp salt

1/2 tsp sugar (optional)

1 (28 oz) can diced tomatoes

1 (28 oz) can tomato sauce

2 cans beans, rinsed (light red kidney, dark red kidney, pinto beans)

4 oz can mild green chiles


Heat the oil in a large frying pan over medium heat until shimmering. Add the onions and bell pepper, season with salt, and cook, stirring occasionally, until softened, about 5 minutes.

Add the garlic, 2 Tbsp chili powder, and 1/2 Tbsp cumin, stir to coat the vegetables, and cook until fragrant, about 1 minute. Transfer veggies to slow cooker.

Add the ground beef to the hot pan, plus remaining 2 Tbsp chili powder, 1/2 Tbsp cumin, and measured salt and cook, breaking the meat into small pieces with a wooden spoon, until the beef is no longer pink, about 7 minutes.

Transfer beef to the slow cooker, add the diced tomatoes and their juices, tomato sauce, beans, and sugar, and stir to combine. Cover and cook until the chili thickens and the flavors meld, about 8 hours on low or 6 hours on high.

Stir in the green chiles and serve topped with your favorite toppings, like cheese, greek yogurt, and fritos.

Taco Rice

1 tbsp olive oil
1 red bell pepper chopped
1/2 red onion chopped
3-4 cups brown rice cooked (1 cup uncooked)
1 cup frozen corn
1 15-ounce can black beans, rinsed
1 tbsp taco seasoning
1/4 cup salsa

Heat olive oil in a pan over medium heat. Add bell pepper and onion to the pan and sauté for 5 minutes. Add the remaining ingredients and toss to combine. Turn heat to low and stir occasionally until warmed.

This makes a good side on its own or you can put it in your tacos or burritos!

Hamburger Cauliflower Hot Dish

1 large head cauliflower
1 lb lean ground beef
1/2 onion, chopped
1 teaspoon cumin
1 teaspoon paprika
1/2 teaspoon dried oregano
Salt and pepper to taste
1 cup coconut milk (or heavy whipping cream)
1 cup chicken broth
2 eggs
1/4 cup shredded parmesan cheese (optional)
1/4 cup sliced almonds

Preheat the oven to 350 degrees.

Cut the cauliflower into florets and discard the core, then cut the cauliflower into even smaller and more uniform pieces. Place a steamer pot over medium heat with a few inches of water, add the cauliflower into the top and season with salt. Steam the cauliflower until al dente (barely cooked) and then remove it from heat and set aside uncovered.

Place the ground beef and chopped onion in a frying pan over medium heat and season liberally with salt and pepper, cumin, paprika, and oregano. Break up the beef into small pieces with a spatula while cooking.  When the meat is mostly cooked remove it from the heat and set aside.

Beat the eggs, coconut milk, and broth together with a pinch of salt and pepper in a bowl. In a baking dish layer the cauliflower and ground beef until it is used up. Pour the egg mixture over it, making sure the meat and cauliflower is covered.

Bake for 40 to 45 minutes until the center is set. Sprinkle with parmesan cheese and sliced almonds and broil for 2-3 minutes. Let cool for 5 minutes before serving.

4 servings.

Susan's Spicy Sausage Cheese Dip

2 blocks cream cheese
1 lb Jimmy Dean hot pork sausage
1 can Rotel diced tomatoes with green chilies
1 can sliced black olives

Cook sausage on the stove. Remove from the pan and set aside. Melt cream cheese in the pan. Add sausage back in along with tomatoes and olives. Serve immediately or transfer to a crock pot to keep warm. Serve with tortilla chips or crackers.

Buffalo Chicken Chili

1 Tbsp olive oil
2 Tbsp butter (or ghee)
2 lbs ground chicken (or ground turkey)
2 large carrots, peeled and chopped
2 red, orange, or yellow peppers, seeded and chopped
1 large onion, chopped
3 ribs of celery, chopped
5 cloves garlic, minced
1 Tbsp paprika
1 bay leaf
Salt and pepper to taste
4 cups chicken stock
1/4 to 1/2 cup Frank's Red Hot sauce (or other hot sauce)
1 15oz can tomato sauce
1 15oz can crushed tomatoes

Place a large pot over medium-high heat. Add the olive oil and butter. Once the butter is melted, add the ground chicken and brown it, about 5-10 minutes. Add the carrots, peppers, onion, celery, garlic, paprika, bay leaf, salt, and pepper. Cook, stirring frequently, for about 5 minutes. (If the pot seems too full you can remove the chicken and cook the veggies  alone for a few minutes, then add the chicken back in.) Add the chicken stock, hot sauce, tomato sauce, and crushed tomatoes. Bring to a bubble, then simmer for 10 more minutes.

* To make this paleo or Whole 30 approved, use ghee instead of butter and use Frank's Red Hot brand hot sauce.

Serves 6.

Buffalo Ranch Chicken Stuffed Peppers


1 lb. chicken breasts
1 medium onion, chopped
1/2 tsp each: dried parsley, dried dill, dried chives, garlic powder, onion powder
salt & pepper to taste
4 red, orange, or yellow bell peppers, tops cut off and seeds cleaned out
1/2 cup Frank's Red Hot sauce* (or hot sauce of choice)
1/4 cup butter or ghee*

* indicates paleo or Whole 30 approved option

1. Preheat over to 350.

2. Mix together dried spices. Place chicken and chopped onions in a single layer on a greased or lined baking pan. Sprinkle spice mixture over everything. Bake for 25-30 minutes or until chicken is cooked through. Remove chicken from oven and (once cool enough to handle) cut into 1/4"-1/2" pieces. Place cooked chicken and onions in a large bowl. Make ahead tip: At this point you can put the bowl of chicken and onions in the fridge overnight and continue with the remaining steps the following day.

3. In a small saucepan melt the butter or ghee. Add the hot sauce and stir to combine. Add sauce mixture to the chicken and stir well.

4. Spoon chicken mixture evenly into all four peppers. Place filled peppers in a baking pan (make sure it has sides because juices will run). Bake for 35-40 minutes or until peppers are softened.

5. Optional: Serve with guacamole on top (highly recommended) and a side of roasted sweet or regular potatoes! These are surprisingly filling.

Do steps 1 and 2 the night before to save time at dinnertime. These make great leftovers as well. I like to make a batch of them and bring them to work for lunches during the week. Reheat in the oven or in the microwave. They are a little spicy so not sure what kids would think, but maybe you could find a mild sauce that still has the flavor? They are my favorite thing to eat these days!

Mushroom Turkey Barley Soup

1 Tbsp butter
1/2 c onion, chopped
2 cloves minced garlic
5 c chicken broth
1/3 c pearl barley
1 T soy sauce
4 carrots, sliced
2 tsp dried dill weed
pepper to taste
8 oz mushrooms, coarsely chopped
1 lb turkey breast, cubed

Melt butter in a stock pot over medium heat. Add onion and cook, stirring occasionally, for 5 minutes, or until onions are tender but not brown. Add mushrooms and continue to cook, stirring occasionally, for 5 minutes.

 Stir in garlic and cook 1 minute. Add stock, barley, soy sauce, and turkey. Bring to a boil, reduce heat to low, cover and cook for 30 minutes.

Add carrots, dill, and pepper. Cover and cook for 15 minutes, or until barley and vegetables are tender.

Wheat Berry & Black Bean Vegetarian Chili


2 tablespoons extra-virgin olive oil
1 large yellow onion, chopped
1 large yellow bell pepper,chopped
5 cloves garlic, minced
2 teaspoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
2 15-ounce cans black beans, rinsed
2 14-ounce cans no-salt-added diced tomatoes, undrained
1-2 canned chipotle peppers in adobo sauce, minced
3 cups roughly chopped kale
2 cups vegetable broth
2 teaspoons light brown sugar
2 cups Cooked Wheat Berries (recipe follows)
Juice of 1 lime
1 avocado, diced (optional but recommended)
1/2 cup chopped fresh cilantro (optional but recommended)

Heat oil in a Dutch oven over medium-high heat. Add onion, bell pepper, garlic, chili powder, cumin, oregano, salt and pepper, and cook, stirring occasionally, until tender, about 5 minutes. Add beans, tomatoes, chipotle to taste, kale, broth and brown sugar. Bring to a boil over high heat, reduce heat, cover, and simmer for 25 minutes.

Stir in cooked wheat berries and heat through, about 5 minutes more. (If using frozen wheat berries, cook until thoroughly heated.) Remove from the heat. Stir in lime juice. Garnish each bowl with avocado and cilantro. This freezes well.

Cooked Wheat Berries:
1 cup hard red winter-wheat berries
3.5 cups cold water
1/2 teaspoon salt

Sort through wheat berries carefully, discarding any stones. Rinse well under cool running water. Place in a large heavy saucepan. Add water and salt. Bring to a boil over high heat, then reduce heat, cover, and simmer gently for 1 hour, stirring occasionally. Drain and rinse.
(Make-ahead tip: Cover and refrigerate for up to 2 days or freeze for up to 1 month.)

Chile-Lime Tacos

Spice Rub:
1 tsp cumin
1 tsp dried oregano
2 tsp chile powder (New Mexico, California or ancho is best)
1/8 tsp allspice
2 tsp salt
1 tsp black pepper

1 boneless chuck or rump roast

Sauce:
1 Tbs olive oil
1 onion, thinly sliced
2 Tbs minced garlic
3 Tbs chili powder
1 Tbs tomato paste
1.5 Tbs dried oregano (or 3 Tbs fresh)
1 can diced chiles or 1 fresh jalapeno, chopped
1/2 cup pineapple juice
1/4 cup lime juice
1 cup chicken broth
1 bunch cilantro stems (save leaves for garnish)

Tacos:
tortillas
diced avocado
diced pineapple
cilantro leaves
diced tomato
lime wedges
sour cream
cheese
salsa

Mix the spice rub in a bowl and rub all over the roast. Place in a slow-cooker. Mix sauce ingredients and por into the slow-cooker, cover and cook on low for 8-10 hours or on high for 5-6 hours, or until tender.

Remove the meat, break into pieces or shred with a fork. Serve with tortillas and garnishes. Serves 4.

Optional sauce: Strain cooking liquid and pour into a sauce pan. Bring to a boil and cook until thickened.

Hot Feta Artichoke Dip

14oz can or jar of artichoke hearts, drained and chopped
1 pkg crumbled feta cheese (plain or flavored)
1 C mayo
1/2 C parmesan cheese, shredded
2oz jar pimentos, drained
Garlic, minced- at least 4 cloves, I usually use 6, but I love garlic!

Mix everything together and put in a casserole dish. Bake uncovered at 350 until hot (15-20 min). Serve with breads and crackers.
